Hidden between the foothills of the Tramuntana and the rolling plains of Sencelles, Can Cavall Blau is where rural Mallorca reveals its most authentic self. Founded in 2017 by a couple who traded city life for a return to roots, this four-hectare organic finca is more than a farm – it’s a philosophy. Here, elegant polo horses graze freely, vines grow under regenerative care, and bitter oranges become the island’s most intriguing aperitif: Amargéro.

This is one of our absolute favourite places on the island – for its people, its beauty, and the sense of calm that settles in the moment you arrive.

🍊 Amargéro – The Signature Sip of the Finca

Crafted from organic bitter oranges and wild herbs gathered from their land (and trusted neighbours’), Amargéro is Mallorca’s answer to the Mediterranean aperitif.
Each bottle is a vintage – no two years taste the same – capturing sun, soil, and season in every sip.

Once made only for friends and visitors, it has quietly become a cult favourite among chefs, bartenders, and island lovers.

What makes Can Cavall Blau so special isn’t just what they produce – it’s how they live.

Their polo horses are not a backdrop, but the heart of the finca: grounding the team, anchoring the days, and shaping a way of farming rooted in patience, respect, and regeneration.

When they arrived, the vines were beyond saving. Instead of removing them altogether, they replanted – Mantonegro and Merlot – and today they craft low-intervention wines that express the quiet soul of the land.

Everything here is done with intention. Nothing is rushed. Nature leads.
