“5 en punto” means five o’clock sharp in Spanish — just like our five quick-fire questions. In this new series, we’re catching up with Mallorca’s movers, makers, and magic-bringers — one question at a time.
This time, we sat down with Katja Lebelt – farmer, polo player, and former stage designer. Together with her family, she runs Can Cavall Blau, a place that’s far more than a farm – it’s a meeting point where agriculture, craftsmanship, and community come together.
In the heart of Sencelles, Katja has brought her vision of regenerative farming to life. Over the past eight years, she and her family have cultivated a sustainable way of living where vineyards, olive trees, horses, and people coexist in balance.
To better understand the roots of this beautiful project, we asked Katja – the heart behind it all – our five questions.



1. What’s keeping you busy (and inspired) in Mallorca right now?
If you run a farm, you are always busy and inspired – there’s always something to plant, to water, to feed, to repair, to discuss, to invent, to create, and so on. That keeps me busy, but it’s also incredibly inspiring to work in and with nature and animals.
We used to run a farm in Germany as well, but nature is so different here in Mallorca that we had to start from zero – with wine, olives, pomegranates, and bitter oranges. Every day I feel grateful to live and work on this majestic island.
2. If Mallorca were a bottle of wine, a horse, or a flavour from your land – which would it be, and what story would it tell?
A bottle of wine would be, for me, a dark red yet light wine – like our Es Gat Anarchista – combining the powerful soil with the transparency of the sharp Mediterranean light.
As for a horse, it would definitely be a strong, clear-headed one with lots of energy – like our mare Chipsa. She’s golden, just like some of the stones on the island.
And a flavour? For me, the strongest flavour of Mallorca is wild fennel, mixed with the scent of bitter orange blossoms.
3. Is there a place, ritual, or local habit that always makes you feel connected to Mallorca?
I love the festivities of Sant Antoni and the dimonis. As a stage and costume designer, I’m always fascinated by the creativity behind the devils’ costumes, bicycles, umbrellas, dragons, and horses you can see.
In Pollença, you find all these amazing art installations — created only to be burned down. It’s such a powerful and symbolic tradition.



4. It’s 5 o’clock somewhere… what’s your favourite way to unwind?
That’s definitely the time to have a glass of Amargéro (our orange bitter) on the rocks.
I love sharing this aperitif with friends at our farm, enjoying the majestic view of the Tramuntana mountains – or at the beach, or anywhere really. It’s that special moment after work and before dinner, with that perfectly sweet-bitter taste.
5. What’s one event or moment you’re most looking forward to?
Besides Amargéro Hour, which takes place every Sunday, we recently launched the Open Farm Tour. It’s a guided experience for up to 20 people, where we walk through the farm and offer tastings of our products at different “stations” — under a níspero tree, beside the olive trees, or inside the vineyard.
It feels a bit like a small theatre production set in nature. The tour ends at our long wooden table, built from the old beams of the farmhouse, where everyone gathers to taste our wines and tapas. It’s a new idea — and I truly hope people will love it.

🌿 Life at Can Cavall Blau
What began as an experiment has blossomed into a meeting point for locals and visitors alike. At Can Cavall Blau, everything revolves around connection – with nature, with each other, and with Mallorca’s cultural roots.
Through Open Farm Tours, shared meals, and creative gatherings, guests are invited to slow down and experience the rhythm of the land — discovering the beauty of slow, conscious living.
From 5 p.m., the gates open for families and friends to explore the farm at their own pace. Children can meet the polo horses, friendly cats, and snail-chasing ducks, while adults unwind in the quiet beauty of the fields — a simple, joyful glimpse into life on the land.

Every Wednesday at 6 p.m., Can Cavall Blau hosts a Guided Walk & Tasting – an intimate introduction to the land, the animals, and the farm’s regenerative philosophy.
And if you’re looking for a drink with a view, don’t miss Aperitivo Hour every Sunday, two hours before sunset — a relaxed evening of Amargéro spritzes, local snacks, and conversation as the light fades behind the Tramuntana mountains.
An informal gathering for the curious and the sociable — a moment to connect, taste, and share.
