Five sharp questions with Mallorca’s movers and makers… This time, we’re sitting down with Dolli Taylor, Founder and Creative Director of trobat, an online collection of artworks by global artisans, and co-founder of trobar – a Mallorca-based concept where art, design, food and community come together.
Here, almost everything guests see can be taken home – from the artwork on the walls to the ceramics, lighting and furniture that shape the space.

Some places are hard to define. Restaurant, gallery, concept store… trobar is a little bit of all three.
This summer, that vision continues with trobar’s new Chef Residency Programme, welcoming chefs from across Europe to take over the kitchen every few weeks. Each residency introduces an entirely new menu and perspective, ensuring that no two visits are ever quite the same.



1. What’s keeping you busy (and inspired) in Mallorca right now?
Right now, it’s the intersection of food, art, and community. We’ve just launched the chef residency programme at trobar, welcoming chefs from around the world to take over the kitchen every few weeks.
At the same time, I’m constantly discovering new artists and makers for trobat. Mallorca has this incredible ability to bring creative people together from all over the world, and that energy is endlessly inspiring.
2. If Mallorca were an object in your shop, what would it be? And why?
Mallorca would be a collection of objects on trobat.
First, it would be Ruth Minola Schiebler’s incredible mosaic eyes. We’ve just launched an exclusive collection of blue eyes, covered in glistening coloured glass mosaic. They catch the light beautifully, and they always remind me of the moment the Mediterranean sea sparkles under the sun. There’s something magical about that light in Mallorca, and those pieces capture it perfectly.
It would also be one of the cocktail glasses by Mallorcan Artist Laura Rubio Banon. She creates these wonderful yellow and green glasses with a tulip-shaped rim that immediately make me think of the island.
And finally, it would be the paintings of Australian Artist Daniel O’Connell. His work celebrates Mediterranean food, sea creatures, and beautiful palm trees: all things that feel inseparable from Mallorca to me. Whenever I think of the island, I think of light, colour, the sea, and palm trees swaying in the breeze. His paintings seem to capture all of that in a single frame.



3. Is there a place, ritual, or local habit that always makes you feel connected to Mallorca?
My home.
We live in a finca with the mountains behind us and the sea in front of us, which feels like such a uniquely Mallorcan landscape. It’s a place that constantly reminds me of why we chose to build our life here.
One of my favourite rituals is spending time in the garden, growing vegetables and flowers with my family. Our pet pig, Gigi, is usually wandering around with us, and we also have chickens roaming the property. The fact that I can spend the afternoon tending the garden with a pig and a flock of chickens nearby still feels wonderfully surreal and very special.
4. It’s 5 o’clock somewhere… what’s your favourite way to unwind and relax?
My ideal evening is surprisingly simple: being with my kids, spending time in the garden, and ending the day with a good true crime documentary.
After working in hospitality, where you’re constantly surrounded by people, noise, and activity, I find myself craving the opposite. A quiet evening at home, watching the children play while I potter around the garden, followed by getting completely absorbed in a documentary about a crime I’m convinced I could solve better than the detectives.



5. What’s one upcoming event or moment you’re most looking forward to?
Christmas.
Not because I’m particularly organised or have started my shopping early, but because by then summer will be over! Anyone who runs a seasonal business in Mallorca will understand.
That said, I probably won’t get much of a break. As soon as the season ends, we’ll be launching trobar on tour: taking the trobar concept beyond Mallorca and into cities across Europe through a series of immersive pop-up dining experiences. Each edition will bring together a guest chef, local artists and makers, and our signature blend of gastronomy, art, design and retail, creating a unique experience inspired by each destination.
So while everyone else is winding down after summer, we’ll already be building the next chapter.
