Every October, Mallorca celebrates one of its most charming autumn traditions – Les Verges, a festivity that fills the island with music, love, and the smell of freshly fried bunyols.
Rooted in an old courtship custom, the night of October 20 was when groups of young men serenaded women under their windows with songs and guitars. In return, the women offered them bunyols – small, round doughnuts made from potato and flour, fried until golden and dusted with sugar.
