From the sea to the ronqueo, from the kitchen to the table.
On 26 September, The Sea Club in Cala Ratjada hosts a special evening dedicated entirely to Balearic bluefin tuna, exploring the product from its traditional butchering through to the finished dishes.
The evening begins with a live ronqueo led by Toni Fiol of Bluefin Balear. This traditional technique of breaking down a whole tuna takes its name from the distinctive sound the knife makes as it moves along the backbone. Guests will get to see the process up close while learning about the different cuts and how each part of the fish can be used.
Then it’s over to the kitchen, where Michael Bosca of The Sea Club and David Rivas of Terrae join forces for a four-hands tasting menu, each bringing their own approach to the different cuts of the tuna.
The menu is accompanied by a pairing of Mallorcan wines, with live music rounding off the evening.
