Founded in 2017 by a couple seeking to escape city life and reconnect with nature, this 4-hectare organic finca is more than just a farm — it’s a lifestyle. Here, elegant polo horses roam freely alongside rows of vines, friendly ducks chase snails, and bitter oranges become one of the island’s most exciting new aperitifs: Amargéro.
🍊 The Signature Sip: Amargéro
Handcrafted from organically grown bitter oranges and herbs from their land (and trusted neighbours’), Amargéro is Mallorca’s answer to the Mediterranean aperitif. Every bottle is a vintage — meaning no two years are the same — and every sip captures the essence of the island.
Originally made just for friends and visitors, the demand from chefs and bartenders has turned it into a cult favourite.
🐴 Life on the Farm
What sets Can Cavall Blau apart isn’t just the products — it’s the experience. Their majestic polo horses aren’t just part of the landscape — they represent the soul of the farm. Their presence keeps the team grounded in rhythm and respect for nature, supporting a lifestyle rooted in organic, regenerative practices.
When they arrived, the vines were too far gone to revive. But instead of giving up, they planted new ones — Mantonegro and Merlot — and began producing low-intervention wines that reflect the island’s character.

Tasting for Thirty (selected Saturdays)
Selected Saturdays throughout the year feature a signature long-table event next to the vines. Think seasonal tastings crafted by local chefs, paired with farm products and natural wines. New: Open Farm Tour (every Wednesday)
A new way to experience life on a working farm in the heart of Mallorca. Every Wednesday evening, they open their gates for a slow, guided walk and tasting — a sociable, sensory introduction to the land, animals, and a real regenerative farming philosophy.

Open Farm (every Sunday)
Sundays also welcome families from 4PM — come meet the polo horses, play with the animals, and enjoy the peaceful rhythms of farm life. No big show. Just the real thing.
Aperitivo Hour (Sunday)
Every Sunday, two hours before sunset, the farm gates open for Aperitivo Hour — a social, relaxed tasting of Amargéro with nibbles, spritzes, and good vibes. Bring your friends, meet new ones, and experience the island’s golden hour from a whole new perspective. Reservations are free but essential (here!).
