This new edition invites you to explore the universe of umami – the “fifth taste” – through four fascinating ingredients that transform cooking with depth, balance, and character:
🐟 Garum · Ancient Roman fish ferment rediscovered by contemporary chefs for its natural intensity and saline richness.
🍶 Barley Miso · A robust, slightly sweet Japanese ferment, perfect for soups, glazes, and marinades.
🍚 Shio-koji · A delicate blend of fermented rice, salt, and koji, used to enhance flavour and tenderise meats and vegetables.
🧄 Black Garlic · Aged to sweetness, with notes of liquorice and plum – one of today’s purest expressions of umami.
🌿 What Is Umami?
Umami – from the Japanese “pleasant savoury taste” – is considered the fifth basic taste, alongside sweet, sour, salty, and bitter. It’s the deep, mouth-filling flavour that makes food satisfying and comforting, found naturally in ingredients like tomatoes, mushrooms, soy sauce, and aged cheese.
In this edition of Sabores del Mundo, you’ll not only taste umami, but also learn how to recognise and use it to transform your own cooking.
